New Cooking Technique: Broth Saute

I made scallops tonight in a broth saute and they were awesome! It’s SO easy. Here’s how to make lowfat scallops in a broth saute.

The key: rinse the scallops and dry with paper towels. Get them as dry as you can, this will give them the “fried” effect without the fat.

Do it: Heat 2 tbsp broth in an iron skillet. Place towel-dried scallops in the pan. Sear for 2-4 minutes on each side, until scallops start to look “flaky” and are less jiggly and more solid. Season with salt and pepper while in the pan.

Done!

So easy and so delicious. I ate them too fast (and shared with several people who also gave them rave reviews) for a pic, sorry! 😀
