Let’s Eat More Pizza (Primal Recipe)

This is the pizza that made me have to do the HCG diet steak day. I ate too much, but if you have better self-control than me you should most definitely eat this:

Paleo Pizza

This is the best pizza I have ever made. I said that last time too, but this one is better. Also, for the record, I ate a large spinach salad beforehand, so that’s why there are no veggies on the pizza. I wanted the happy pepperoni (humanely raised!) to shine.

After many trials, I have the two secrets to crispy paleo pizza crust: butter and coconut flour that sits for 5 minutes. Let me explain:

Butter: I used to use oils to make the pizza crust, but if you use melted butter you get the crispiness oil can’t provide.

Coconut flour: I always used about 1/4 cup coconut flour in my crust to “dry” it out, but only recently did I learn that you need to let anything made with coconut flour sit for 5 minutes to absorb the liquid and fluff up. Genius!

Primal Pizza Crust Recipe:

  • 4 tbsp butter (ish)
  • 2 eggs
  • 4 tbsp oil (ish)
  • flax meal
  • hazelnut meal
  • pecan meal
  • coconut flour

I can’t really give you measurements on the flours, I add them and stir until I get the right consistency. The right consistency is sticky but can be rolled into a ball. If it’s crumbly you’ve gone too far with the flour, add more oil or butter. If it’s too sticky to smush out, add more flour.

For this pizza, I also sauteed 4 cloves of garlic in butter and stirred them into the crust. YUM!!

Bake this at 400 degrees for 10ish minutes. You want the crust to be cooked but not brown yet.

Primal Pizza Toppings:

Primal Pizza Sauce

  • Leftover tomato basil soup. Just tomato sauce, heavy cream, and basil, oregano, and garlic salt.
  • Mozzarella cheese
  • Pepperoni, one full layer, then cheese, then a chopped layer of pepperoni and a light sprinkle of cheese

Put back in the oven for another 5ish minutes, til the crust browns and the cheese is melted. Throw shaved parmesan on top and you get this:

Alas, I ate too much. I couldn’t stop. My tummy was full and sticking out but I still couldn’t stop. Don’t do this to yourself!!!
