Friday Night Pizza

The scene: Friday night

Me: I don’t know if this crust is going to work, but I’m going to try it.

That Ripped Guy of Mine(TM): Didn’t you perfect it with that crispy crust recipe?

Me: Yeah, but that was with nuts and flax. Now I want to mix in veggies so it’s not as much nuts.

That Ripped Guy of Mine(TM): Oh, okay.

I continue experimenting with a new recipe … that worked!

As stated above, I’m trying to cut down on the nut flour and sneak in more delicious veggies. Of course, the issue is that veggies are very watery, so their natural liquid often works against crunchiness. If you’re a fan of deep-dish pizza, you could go ahead and make this pizza just like it is. I continue to quest after the elusive crunch, so I will keep tweaking, but if you’re looking for a totally new and particularly thick-crust pizza recipe, check this one out—it uses spaghetti squash for over half the “flour”!

Always use the parchment paper! Helps crispness AND clean up.

Ingredients
Already-roasted spaghetti squash
1/4 cup butter
2 eggs
1/4 cup flax meal
1/4 cup coconut flour
1/4 – 1/2 cup hazelnut meal
1/8 cup ground chia seeds (optional, I think? could have helped bind)
seasonings

Toppings
Already-made spaghetti sauce (you can tell what I had for dinner the night before; this sauce had ground beef, onion, garlic, and finely chopped zucchini and yellow squash)
Mozzarella
Happy pepperoni

Do It:
Place all the ingredients in a food processor.
Process until it all goes together.
Let sit for 5 minutes.
If it looks too sticky (like it’d stick to parchment paper), add more flax, hazelnut, or coconut flour and process or stir again.
Scoop out onto parchment paper on a baking sheet.
Smoosh with another piece of parchment paper until 1/4″ thick.
Bake until almost golden brown, but not quite. (about 10 minutes in 425-degree oven)
Let cool for 5 minutes (optional).
Add sauce + toppings.
Bake again until everything is melty and the crust is golden brown (about 5 minutes).
EAT!

Now, it may look like I eat a lot of paleo pizza. And I do. But ALWAYS with a spinach salad!!
